Join us on Friday the 21st (the Winter Solstice) for the release of our 2018 Solstice Cyzer! What’s a Cyzer? Think of it as a hybrid of a hard cider and a mead. This Cyzer is made from fresh, local, organic apples and Buckwheat honey (a very dark honey, resembling molasses) and was started around the summer solstice. To add some character, we co-fermented whole, wild-foraged elderberries and home grown lavender flowers with this cyzer during secondary, and finished it with a very light carbonation. This cyzer comes in at 11.1% alcohol and has really deep mineral and caramel characteristics from the honey, distinct notes of tart ripe elderberries, and a subtle note of lavender flower, and a striking color. This is not a sweet, honey cider- it’s dry and layered, more akin to a young Madeira or Sherry and in beer terms, i find similarities to a good Scotch Ale. This drinks well during the cold winter months and will age well in your cellar.
