Cider handcrafted from traditional apple varieties.
Floral, citrus, and herbal aromas, bright acidity, and full-bodied with tannins from the apples and texture from the yeast lees. 0% residual sweetness.
Dry Cider-Apple Field Blend
Traditional cider-apples pressed and fermented dry. Barrel-aged 4-6 months in neutral oak to develop deep flavor and texture.
Off-Dry Heirloom Field Blend
Traditional cider and heirloom apples pressed and fermented dry in oak barrels. Finished with fresh-pressed apple juice to balance the acidity and complement the tannin-rich apples. 1.5% residual sweetness.
Handmade from fresh-pressed, local, organic fruit.
Dry-sider is one of our mainstays. It’s fermented dry (no residual sweetness) and aged sur-lie in neutral oak barrels. We stir the barrels to rouse the yeast lees, building up the volume and mouthfeel and complementing the acid balance. Notes of dried apples and nuts, with a mineral quality and moderate carbonation. 0% residual sweetness.
Just a touch off-dry, our wee-sour is barrel-aged to develop extra depth. We blend in a portion of cider that was allowed to sour via lactic acid bacteria in the barrel in hopes to strike a balance of slightly sour with a hint of sweet on the finish to fill it out. We get some mild tannins on this one and enjoy this as a daily-drinker. 0.5% residual sweetness.
SmashApple is our refreshing, off-dry cider with classic, fresh-apple flavors. Notes of green apple, citrus, and tropical fruit, with a lively carbonation and creamy texture. This is a daily drinker with a touch of sweetness to balance the apple's characteristic acidity. 1.5% residual sweetness.
Seasonal co-fermentations – Limited-edition ciders
Dry Rainier Cherry
Whole, organic apples are pressed and fermented dry, then transferred into oak barrels for a second fermentation on whole Rainier cherries. The result is a beautifully balanced cider with bright acidity from the cherries, a supple mouthfeel from the long fermentation and aging sur-lie. Notes of green apple, peach, and a touch of cooked sugar compliment to character imparted by the Rainiers. This cider keeps getting better with age. 0% residual sweetness.
Bluet Pass Rosé
We co-ferment fresh whole blueberries with dry apple cider to produce a lightly colored rosé with subtle blueberry character. Finishes light, slightly tart, and totally dry. Fermented in stainless steel and aged to retain the fruit character. 0% residual sweetness.
Cot in the Sun
We tossed a healthy amount of fresh, home-grown apricots in this cider and allowed them to co-ferment with the apples in a stainless tank. The result is a characteristic tart-apricot cider with enough tannin to fill in the mouthfeel. 0% residual sweetness.
Cot in the Rain
A seasonal favorite. Off-dry apricot cider finished with fresh-pressed pinot gris grapes. This product sits on the sweeter side of the spectrum, pushing notes of sweet peach and caramelized apricots. 1.5% residual sweetness.
SmasHopple / Dry-Hopped
Off-dry cider blended with aromatic hops from the Yakima Valley. Citrus and tropical fruit dominate, with a touch of pine resin. We continue to experiment with local hops and find blends that fit the mood and season. 1.5% residual sweetness.
Moderate sweetness meshes with intense flavors and aromas in this delicious cider. Inspired by the fresh herbs of Thai cuisine, it's co-fermented with lemongrass, ginger, basil, and turmeric. A refreshing complement to any spicy dish. Lemongrass and ginger pop out first, followed by basil and turmeric on the finish. 1.5% residual sweetness.
Dry apple cider co-fermented with buckwheat honey. Barrel-aged six months, followed by a secondary co-fermentation with lavender flowers and elderberries. The result is a mineral-rich cross between a cider and a mead, with tannins and tartness from the elderberries and a light floral aroma from the lavender. Moderately carbonated for texture.
