2018 Cabernet Sauvignon Block Eighteen

Fruit for this Cabernet Sauvignon comes from a very small block perched above the Columbia River in Wallula Gap vineyards in Horse Heaven Hills AVA. 2018 allowed for a long, warm and dry ripening to develop powerful concentration and flavors. This is a big Cab with well ripe fruit flavor profiles, balanced acidity, and a texture that stands behind the character of the wine. Grapes were fermented cool and slowly with a mix of wild and cellar yeasts and aged for 28months in a mix of oak barrels, first-use and neutral wood, to provide some vanilla and caramel tones without dominating the fruit. This wine will age well through the 2020's.

Works well with heavier grilled proteins, especially lamb or game meat, flavorful fish like monkfish, roasted vegetable dishes that bring out umami (ie. mushrooms and charred eggplant), or desserts with a dark chocolate component.
