2019 Chardonnay

2019 Chardonnay is a blend of wine fermented completely using native yeast and wine fermented with cellar yeasts. Native fermentations were carried out in neutral oak barrel very slowly in the cellar. All wines were aged in neutral oak on fine lees with batonnage for 9 months. Little to no sulfites used during aging and minimal sulfites added at bottling. No fining or filtration prior to bottling. Look for flavors of pomme fruits, melon, and light citrus with slight wood spice and character from spending time aging in barrel and a full mouthfeel and texture.

Light proteins (fish, pork loin), sharp cheeses and fruit, buttery baked goods.
